Sweet Chilli Jam

I always have a jar of this at home. I use it to bind stir fries together, to stir into mayonnaise or crème fraiche as a dip for vegetables or to spread on sandwiches. Sometimes I even pop a spoon of the chilli jam into the savoury egg custard base of a quiche just for that added kick.

Ingredients

  • 8 ripe plum tomatoes-cut into large chunks
  • ½ medium onion-diced roughly
  • 2 cloves of garlic-crushed & chopped
  • 8oz/225g caster sugar
  • 3 ½ floz/100ml red wine vinegar
  • 1 rounded dessertspoon of dried chilli flakes
  • 3floz/75ml water

The process

Place all of the ingredients together in a large saucepan.

Boil for about 20 minutes or until the tomatoes have softened and cooked and about 1/3 of your cooking liquor has reduced. Blitz with a hand blender and check the consistency. If you would like it a little thicker return the jam to the heat for an extra 3-4 minutes.

The consistency should be similar to a thick soup. Pour into sterilized jars and store in the fridge for 6 weeks.
